Superb Chicken Burgers


1 lb of ground chicken or turkey

2 tbsp olive oil, divided

½ small red onion, minced

1 clove of garlic, minced

½ cup flat-leaf parsley, finely chopped

1 tbsp fresh rosemary, finely chopped

½ tsp dried thyme

Salt and pepper, freshly ground

Note: Substitute ground turkey for the chicken. Not planning on eating them all tonight! Save half the patties by wrapping them in plastic wrap and storing them in the freezer for a quick weeknight meal.


Combine all above burger ingredients and mix well. Don’t be shy! Use your hands as it is the best way to make sure everything is all nicely mixed together. Divide into 8 and roll each piece into a ball, then press into flat patties.
Get a non-stick frying pan and turn onto high heat and drizzle in the remaining olive oil. Once the pan is nice and hot, add the patties. You should hear them sizzle as they hit the pan. Let cook on high heat for about a minutes then reduce down to medium-high heat and cook for 2-3 minutes.
Once ready, flip the burgers (should be nice and golden brown on one side) and cook the other side for a further 2 minutes, or until cooked through  
Serve on buns with topping of your choice or for a low-carbohydrate alternative, skip the bun and serve on top of salad.
