Spicy Pork Burgers
1lb ground pork
½ cup Parmesan cheese, freshly grated
1 tbsp Dijon mustard, heaped
1 thumb-sized piece of ginger, freshly grated
1 garlic clove, minced
½ small onion, finely chopped
1 tsp chilli flakes or 1 fresh red chili, finely chopped
½ cup fresh cilantro, finely chopped
Salt and pepper, freshly grated
Combine all above burger ingredients and mix well. Don’t be shy! Use your hands as it is the best way to make sure everything is all nicely mixed together. Divide into 8 and roll each piece into a ball, then press into flat patties.
Get a non-stick frying pan* and turn onto high heat and drizzle in the remaining olive oil. Once the pan is nice and hot, add the patties. You should hear them sizzle as they hit the pan. Let cook on high heat for about a minutes then reduce down to medium-high heat and cook for 2-3 minutes.
Once ready, flip the burgers (should be nice and golden brown on one side) and cook the other side for a further 2 minutes, or until cooked through
Serve on buns with toppings of your choice or on a salad or served with rice and sauted vegetables.
*Instead of the fry-pan method cook these delicious burgers on a charcoal or gas BBQ
