Simply Delicious Beef Burgers

Ingredients:

1 tbsp olive oil

1lb of ground beef

1 heaped tbsp Dijon mustard

1 garlic clove, minced 

½ small onion, finely chopped

½ cup fresh flat-leaf parsley, finely chopped

1 egg

½ cup grated fresh Parmesan 

¼  tsp cumin

1 tsp chilli powder  

A few splashes of Worcestershire sauce

Salt and pepper, freshly ground

Toppings:

8 English muffins

8 small lettuce leaves or pieces

1 medium tomato

1 heaped tbsp Dijon mustard

3 tbsp mayonnaise

splash of Worcestershire sauce

Ketchup

Directions:

Turn on oven to 3500F
Combine all above burger ingredients except olive oil and mix well. Don’t be shy! Use your hands as it is the best way to make sure everything is all nicely mixed together. Divide into 8 and roll each piece into a ball, then press into flat patties.
Get a non-stick frying pan and turn onto high heat and drizzle in the olive oil. Once the pan is nice and hot, add the patties. Should hear them sizzle as they hit the pan. Let cook on high heat for about a minutes then reduce down to medium-high heat and cook for 2-3 minutes.
Place the English muffins on a baking try and bake them while the burgers are almost cooked
Slice tomatoes and separate lettuce leaves ready to be put on the buns. Mix together Dijon mustard, mayonnaise and Worcestershire sauce
Flip the burgers (should be nice and golden brown on one side) and cook the other side for a further 2 minutes
Just before the burgers are done (about the last minute of cooking), take the buns out of the oven and separate (should see a rise of hot steam escaping the buns – perfect!).

To build each bun, add a dollop of the Dijon-mayo mix to the bun base, then top with the prefect cooked burgers, tomato and lettuce. Rub the bun top with a teaspoon of ketchup, then gently press it together. Serve immediately with simple side salad and sweet potato fries (the Dijon-mayo mixture makes excellent dipping sauce for the fries).
